Observed various prepped tcs foods in the reach in cooler without date markings.Corrective Actions: Ensure tcs foods that will exceed 24 hours in storage are date marked. The date of preparation marks day one and not to exceed 7 days.

Time as public health control: procedures and records

Observed no time stamps/documentation for the sausage kolaches sitting at room temperature. Kolaches were sitting out for 30 minutes. Corrective Actions: Ensure time stamps/documentation is being adhered to. Person in charge placed time stamps on the kolaches and will discard after 4 hours.

Observed various bulk bins without labels.Corrective Actions: Ensure all bulk bins are labeled with the name of the food items.

Wiping cloths; properly used and stored

Observed a damp wiping cloth stored on the countertop next to the leftmost reach in cooler in the food prep area.Corrective Actions: Ensure all damp cloths are stored inside sanitizer buckets.
