observed the following cold hold foods out of temperature at the self-serve salsa station in the dining area: pico de gallo 52F, regular salsa 47F, fire salsa 49F. The cooler is not working properly and measuring 49-50F. The person in charge has a current pending work order for reach in cooler repair.Corrective Actions: In the meantime, establishment is allowed to use time(must be discarded after 4 hours). The manager discarded the tcs foods that had exceeded 4 hours and stocked the self-serve cooler with fresh salsa and pico from the walk in cooler.
