  Observed chicken on the bottom shelf of the display warmer at 104*F. The temperature was increased, but the internal temperature did not increase during inspection. Manager stated they turned it chicken is discarded every 2 hours, but a time was not written.Corrective Actions: Ensure hot held food is kept at 135*F or higher. Ensure if time as a control is used a time stamp is written.
