  Observed multiple buffalo chicken rollers maintaining a hot holding temperature of 120-128F for less than 2 hours on the left hot roller line. Corrective Actions: Must hot hold at 135F or above. Manager removed buffalo rollers and began to reheat to 165F before reserving.
