Proper cold holding temperatures
Observed butter with an internal temperature of 42*F, observed hot dogs with an internal temperature of 47*F, and brats with an internal temperature of 45*F at the beginning of the inspection. Internal temperatures were tested again and had not changed. A symbol with a snowflake was on the bottom display at the beginning of the inspection and was gone at the end. The temperature display said 39*F at the beginning of the inspection and said 37*F at the end. Management will monitor the temperatures to verify the refrigerator was in defrost.Corrective Actions: Ensure all temperature as a control for safety food is kept at 41*F or lower at all times.
