Observed 4 pack each of mahi and salmon portions thawing in commercially ROP pa, both item still semi frozen and not posing health risk, staff removed ir from the bags and placed in a tray to defrost, staff was coached on proper ROP packaging thawing. Also provided manager with agency literature to be place on kitchen area.
