Violation of Code: [511-6-1.04(4)(m)] Observed wet wiping cloth stored on the prep counter, and not inside a sanitizer bucket, beside the espresso machine in the front food service area. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held in a sanitizer bucket of 200-400 ppm QUAT. COS: Cloth was placed in sanitizer bucket at 400 ppm QUAT Repeat Violation.
