There were multiple days of HACCP logs not being completed or only halfway completed. Establishment is having technical issues with online thermometer system and are doing partial online logs and partial paper logs. Inspector suggested primarily using paper logs to ensure logs are completed until technical issues are resolved. Logs must be completed and documented daily if HACCP processes are occurring. RE-INSPECTION REQUIRED.
