Mops not allowed to air dry after use

Observed mop inside mop squeeze area not able to fully air dry. Person in charge moved map at time of inspection.

Cold Holding - Time/temperature control for safety cold food was not maintained at temperatures in accordance with the Food Code.

Observed Raw shrimp on bather table above 41f at 55F***. Person in charge asked employee to battered and ice bath at time of inspection. Observed fish fillets tilapia-cod/ At 45F Person in charge add ice to fish at time of inspection.

Hot Holding - Time/temperature control for safety hot food was not maintained at temperatures in accordance with the Food Code.

Observed 3 food containers in steam well at 59F. Person in charge switch them with other ones that were heating at boiling water on stove at time of inspection.

Single-service and single-use articles, use limitation

Observed single used containers as scoops and one baking no handle plastic glass in flour as a scoop. Person in charge removed single service plastic and baking plastic container no handle from flour, rice, beans, sugar at time of inspection.

Nonfood-contact surfaces not cleaned at frequency to prevent buildup of residue

Observed dust build up in limes juice/beer walk in cooler

Before Use After Cleaning - Utensils and food-contact surfaces of equipment are not sanitized before use after cleaning.

Observed no sanitizer bucket make in kitchen or prep area. Person in charge made sanitizer bucket at time of inspection.
