Using a Handwashing Sink - A handwashing sink is not maintained so that it is accessible at all times for employee use; is being used for purposes other than handwashing or is not being used in accordance with manufacturer's instructions

Observed sanitizer bucket stored in the bar handsink. Person in charge removed bucket at time of inspection.

Equipment & Food-Contact Cleaning Frequency - Equipment food-contact surfaces and utensils shall be cleaned according to the Food Code.

Observed build up around the soda dispensers in the dining room area. Person in charge cleaned dispensers at the time of inspection.

Cold Holding - Time/temperature control for safety cold food was not maintained at temperatures in accordance with the Food Code.

Observed the marinated chicken and marinated beef in the lowboy 2 temping above 41 degrees. Person in charge moved all TCS foods to the walk in cooler at the time of inspection.

RTE TCS, Date Marking - Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours was not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, in accordance with the Food Code.

Observed containers of salsa, cheese, and black beans without a date mark label. Person in charge provided labels at the time of inspection.

Equipment not maintained free of encrusted grease/soil deposits

Observed grease build up on the sides of the grills and fryers on the kitchen line. Observed grease build up on the front and sides of the chip grill on the chip grill line. Observed heavy grease build up on the vent hoods on the chips grill line.

Physical facilities not maintained in good repair & cleaned as often as necessary to keep them clean

Observed dust build up on the ceiling vents throughout the kitchen. Observed dust build up on the ceiling vents throughout the dining area. Observed dust build up on the ceiling vents in the women bathroom. Observed dust build up on the ceiling vents in the men bathroom.

In-use utensils not properly stored between uses

Observed knife stored between the wall and side of make table 2. Person in charge removed and properly stored knife at the time of inspection.

Lighting intensity not adequate in food prep, storage & service areas

Observed the ceiling light above the 3 compartment sink flickering on and off.

Openings to outside not protected against entry of pest as specified in the Food Code; and/or Protective barriers not provided for exterior walls/roofs

Observed the garage doors opened without a protective covering. Person in charge closed garage doors at the time of inspection.
