Plumbing system not maintained in good repair

Observed a leak on the piping underneath the right side basin of the three compartment sink. Person in charge was able to have maintenance on site to fix the leak.

Equipment not maintained free of encrusted grease/soil deposits

Observed grease build-up on the hood vents at the back prep line and above the cooks line equipment. Observed grease build-up on the sides of the deep fryers across from the wood fire grill.

Physical facilities not maintained in good repair & cleaned as often as necessary to keep them clean

Observed food debris build-up on the floor underneath the cooks line equipment. Observed dust build-up on the two small fans stored near the chlorine dish machine. Observed there to be stagnant water pooled underneath the liquor wells at the left end of the bar.

Package Integrity - Food packages were not in good condition and did not appear to protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants.

Observed 1x dented can of ketchup and 1x dented can of red paruvian peppers stored on the shelves on the back prep line. Person in charge removed the cans to be returned to the vendor.
